What Diabetes Looks Like: Dessert

Fruit is a tricky thing for me. I know it’s good for me and that I should eat more of it. I also know that I need to dose farther in advance to prevent a blood sugar spike afterwards, something that’s not always feasible for me since I eat in a cafeteria and I don’t know in advance if the fruit will actually be ripe. Today, I’m trying an experiment: dessert is vanilla yogurt topped with bananas and walnuts. I dosed in advance for the banana and nuts contain lots of good fat. Have I prevented a blood sugar spike? We’ll see in a couple of hours.
